acute pancreatitis
First, let's talk about nutrition for acute pancreatitis. After an acute attack and for the next two days, you should not eat at all. We are only allowed to drink five or six glasses of mineral water. The regeneration of the organ occurs due to the fact that gastric and pancreatic juices are not secreted.
On the third day, eat a liquid, unsalted meal high in carbohydrates. Wheat crackers, vegetable and grain soups, and light broths are allowed. After that, you can enter omelets, turkey fillets, chicken, lean fish.
On the fifth day, the calories were increased to 700-800 kcal, including 200 grams of carbohydrates and 15 grams of protein. Fat was introduced between the sixth and ninth days.
During this time the menu should look like this:
- Our breakfast is porridge without milk, tea with sugar, oranges (apples);
- Snacks mashed carrots (potatoes), boiled low-fat fish or chicken (50g), rosehip broth;
- 150 grams of lunch broth (vegetables), 30 grams of boiled fish (veal), mashed apples, mashed potatoes;
- Second snack. 50 g cheese (0-2%) sweetened, sweet tea;
- Instead of dinner - a spoonful of honey and boiling water (250ml).

- Homemade jelly, mousse. Less common are marshmallows;
- Mineral water, preserves, weak tea, rosehip broth, jelly.
chronic form
A diet for chronic pancreatitis differs from a diet for acute inflammation. The chronic "version" develops with an acute inflammatory process of the glands, with liver cirrhosis, hepatitis, gallstone disease, gastrointestinal ulcers, atherosclerosis. The menu should take into account the context in which pancreatitis develops.
Your primary treatment is not medication, but a diet for chronic pancreatitis, with a broad menu based on several principles:
- We eat six times a day, little by little, and need products that have a laxative effect.
- Track your daily protein intake. It needs 130 grams per day, and plant protein needs 30% of that number. We recommend veal with beef, rabbit, turkey, pork with minimal fat, chicken and lean fish. With the constant pain, the meat is shredded or steamed. You should not give up low-fat fish and meat dishes: they prevent hepatic steatosis, which is characteristic of the chronic inflammatory process of the pancreas;
- Homemade fresh cottage cheese (non-acid and minimal fat) offsets fat conversion. Other dairy products are also required. Add whole milk to first courses, cereals, jellies, or half a cup a day (if well tolerated). The fat content of milk should not exceed 2. 5%. If you're feeling good, let's say cheese (a little), minimal fat, mild variety. Don't forget the kefir and fermented toasted milk (homemade is the best option). There's no need to eat store-bought yogurt with flavors and starches: there's no benefit here;
- Egg. Overall is not recommended. Eggs can be used as a complement to other dishes, in the form of steam omelets (protein), whipped protein in other dishes;
- plant protein. We look for them in rice, pasta, yesterday's bread, oatmeal, semolina, breadcrumbs, buckwheat. The consumption of soy is prohibited;
- Fat. There should be 70 in the patient's diet, 80% of which should be of animal origin. They will be eaten with other foods and dishes. Add butter to ready-made porridge or pasta before serving. You can use vegetable oils if you have a good tolerance for them. Other types of fats are prohibited (cooking, beef, margarine, pork);
- carbohydrate. They need up to 350 grams per day. These are honey, sugar, syrup and jam. You need semolina, oatmeal, buckwheat, barley, rice, pasta. Vegetables, carrots and beets, potatoes, melons (zucchini, squash, squash) are acceptable. Best cooked with steam or water, steam pudding is also suitable, and vegetables are best eaten in the form of mashed potatoes. Do not eat raw. Bread allowed white, black, gray;
- fruit. Most importantly, a non-acidic variety of apples is required. Bake, wipe, cook preserves. For the latter, dried fruit is suitable;
- sauce. In all varieties with pancreatitis, a sauce made from flour and milk is allowed. We do not pass flour and add minimal salt;
- First meal. We never reject them. You can drink soups of grains, vegetables, lean poultry, meat, fruit, dairy products;
- Drink. In addition to the above-mentioned preserves, it is also useful to drink fruit juice, milk tea, and mineral water;
- Supplements, special products. Add protein powder and vitamins to your diet;
Do not overeat, and the volume of food (plus any fluids you drink) should not exceed two and a half kilograms. No matter how strict the pancreatitis diet may seem, a rough menu probably won't be boring and varied.
Here's how to plan meals for chronic conditions:
- 7 - 7. 30 am. breakfast. Milk oatmeal, boiled beef, sweetened tea;
- 9 am to 9. 30 am. Lunch. Baked apples, steamed egg rolls, rosehip tea;
- 13. 00. Our lunch consisted of vegetable soup, beef soufflé and pasta. for sweet berry jellies and preserves;
- 16. 30. Afternoon snack. milk tea with cottage cheese;
- 20. 00. We had dinner with tea and fish cakes.
Nutrition during remission
Here's a slightly different approach to meal planning. You can diversify your recipes. You need lots of protein and more fat than otherwise. Carbohydrates are also complex.
The main features of the diet are:
- Our use of protein exceeds our physiological standards;
- Intakes of fats and complex carbohydrates are within our normal range, and carbohydrates come from grains;
- Less than standard use of jams, cakes, pastries, honey, sugar and salt.
During remission, it is worth giving up substances that irritate the mucous membranes of the gastrointestinal tract. It's not just alcohol - skip the vinegar and any spices.
If relief occurs, diet can be changed. Now it is not only possible to cook or steam food. You can stew and roast vegetables, fish and meat. No Friction: It's still okay to eat whole foods. Food should be warm, but not over 60 degrees. We knocked on the door 4 to 6 times, with up to three hours between meals.
Digitally, it looks like this:
- Protein needs 120 grams, of which 70 grams are from plants;
- The fat in the medical menu contains 90 grams, one-third of which is vegetables;
- We eat 350 grams of carbohydrates a day, 40 grams of which are easy to digest;
- Calorie Content - Up to 2600 kcal.
